I have this Spanish vocabulary deck https://ankiweb.net/shared/info/1274644414 with sub-groups of ordered cards, first one introduces the infinitive, and next 3-5 show example sentences with different tenses and conjugations.
How to configure Anki (I assume Display Order??) to avoid breaking this order during reviews?
Is the config the same for Desktop (Mac) and iPhone?

You can control the order that the cards are introduce when they are New. But after that, each card is on its own schedule, and won’t necessarily be scheduled on the same day, so there’s not much point in trying to control the order when they come back for Reviews.
For New cards – assuming their New #s (see the Due Date column in Browse) are already in the right order – what you have set for New card gather and sort will work.
