"I am creating my Omission of Words cards, and instead of hiding only the selected word, it is hiding the entire text. How can I fix this?

That looks like you have a modified note type/card templates. Perhaps something that is blending Cloze and type-answer – perhaps something that isn’t a Cloze note type at all.
