Do you have more New cards available (not buried, not suspended)? I can see in your 2nd screenshot that you have another 21 New cards that will be buried today. But are there more than that?
That seems like it might be “Unbury”? Are you clicking that on the study screen, or in the Browse window?
If it’s the study screen – what deck/subdeck are you doing that on? It won’t unbury other cards in other subdecks.
If it’s in the Browse window – are you selecting the cards you want to unbury first? If you only have 1 card selected, only 1 card will be unburied.
The Custom Study window tells you the problem – there are no more New cards in the deck you have selected.

Here’s what happens for me:
If I go into a subdeck (for example Oberschenkel), Anki shows me that I can study 29 new cards, plus +37 in grey. Even though I have activated all cards in the card browser for this subdeck, it still stops there.
If I go one level up (e.g. Untere Extremitäten), I suddenly can learn over 100 cards without any grey number showing up.
The same happens if I go even higher (main deck Anatomie): there I can also study over 100 new cards without a problem.
So the settings are exactly the same for all decks, but in the smaller subdecks it always limits me.
When I try this not in the app’s study screen but in the browser, the issue is the same:
It says I have a total of 66 cards in the deck.
My daily limit is set to 100 cards.
But still, I can only study about 29 cards there.
And with my own custom decks, it’s even worse:
No matter if I study the main deck or the smallest subdeck, I can only learn 6 cards.
The remaining 62 cards always stay greyed out.
Do you maybe know why subdecks behave differently than the main decks in this case, and why my own decks are even more limited?

I think you’re getting decks “Stapel” and tags “Schlagwörter” confused. Or at least, you’re showing us screenshots of the Browse window with a tag: search – and those cards are in a wide variety of decks/subdecks.
Yes, the limits for parent- and subdecks interact – The Anki v3 scheduler - Anki FAQs . If you have a lower limit on your subdecks, that’s how many cards it will allow through.
The Decks list – on AnkiWeb or on desktop – will show you the full number of cards available, up to your daily limit. But in the study screen, you’ll see that a portion of those will be buried automatically today as siblings. Studying - Anki Manual
29 + 37 = 66 – the total you see on the Decks list.
Similarly 6 + 62 = 68
You have a lot of decks. Are you sure they are each using the Options preset that you think they are? In your original post, you showed us one preset that is used by 78 decks, and another that is used by 1 deck. If you have subdecks that are assigned to the wrong preset – or that are using “This deck” limits instead of the “Preset” limit – they will behave differently.

I’ve found a kind of “solution” by creating many subdecks and setting individual limits, but I’d really appreciate it if you could still take a look at my account, since my studies are starting again and I’d like to use Anki properly.
I don’t see anything unusual happening in your collection.
As I speculated above, you don’t have very many unsuspended New cards. For instance when I search is:new -is:suspended in your top-level deck, there are only 66 cards – which matches exactly the 66 cards you see in the Decks list.
As I also mentioned above (read the link I posted there), the 29 + 37 you see on the study screen is because you have sibling burying enabled. You’ll only see 1 card from each note today, and the others will be available to study the next day. Studying - Anki Manual
I didn’t check every subdeck (that’s up to you!), but the ones I saw were all using the same “Preset” limit (right now: 100 New). They have even fewer cards – 31 + 24 = 55 – but that makes sense because the other 11 of the cards are in their parent “1.” deck, for a total of 66.
If you had more unsuspended cards, the limits of your parent- and subdecks could interact and limit your cards further (see the link above for that as well) – but that’s not what’s happening here. You just don’t have any other cards to introduce.
I don’t think more subdecks will be helpful to you here – you’ve already got almost 80 decks. But it’s not clear what you’re expecting to see that’s different than what you’re seeing.
