I switched my profile to a brand new one where there should not be any data on it. Then I added a few cards and wanted to sync, now anki tells me that it has checked 130 000 cards even though there are only 30 cards on my deck in total.
I wanted a fresh new profile so that is why I switched the profiles, how is it that it is still syncing when there are only 30 cards, also I forced the sync with ankiweb, so that the deck with 30 cards is now overwriting the existing backup.
You can’t sync multiple profiles to the same AnkiWeb account. Did you also create a new AnkiWeb account or are you still using your same account? You can probably use a one-way sync to overwrite the collection database in your existing account, but that doesn’t change the fact that you have (now-unused) media there, which AnkiWeb will try to sync back to your device.

To completely get rid of your old profile and start over fresh with a new one?
To have a fresh new profile and import the collection from your old profile?
To have multiple profiles (which isn’t typically necessary for a single user – Profiles - Anki Manual )?
I would like to get rid of the old profile and start over fresh with a new one.

Can you help me with starting a new profile, I tried with file and then switch user, after that deleting the old profile and creating a new one.
there is a lot of unused media from my old profile, should i just delete the account all together or do you have another solution, because I already exported my old decks just in case.
If you want a new profile – yes, File > Switch Profile is the way to do it. But if you sync that to your current AnkiWeb account, everything you’re trying to get away from will come with it.
I think you’re right, removing your account – https://ankiweb.net/account/settings > Remove account – is probably the fastest way to clear that out. That will free up your email address to create a new account with it. Then you can set up syncing with your new profile and account.
