Is it normal to have sync run on all my cards from time to time? I only add a few cards which is why I’m concerned. Could this be why I’m losing some media?
You are somehow modifying many of your cards. For example: Reschedule cards on change.

Is that an option in the settings that causes this issue?
“Reschedule on change” is in the FSRS Deck Options. If you’re making frequent changes to your FSRS parameters or optimization, and rescheduling your cards, that puts a revlog entry on every card. Those would need to be synced.
This is just your cards/notes/types/templates. Media sync is separate.
