Can someone advise me how to share my decks with a friend in a way that means they are read-only, or at least in a way that if they edit them it can’t affect my original decks in any way, please? I am paranoid that if I share them then I could lose my work if they get edited!

If you export you decks and share the .apkg file with them, there won’t be any interference (unless you also give them you ankiweb account details and they sync it, only in that case their changes would affect you).
So just give them the file, but not your account.
Regarding restricting editing, I don’t think that’s possible.
