There is a lot of discussion and development on AnkiForums to make Anki easier to use, so if you post your specific ideas it will be helpful to the developers. (So far I think the development has maintained a balance between power users and novice users.)
If you’re in a hurry, there are many free add-ons to improve and customize Anki UI. (Addons only work on the desktop, and are basically developed by volunteers so they are not related to the official Anki.)
