There is a lot of discussion and development on AnkiForums to make Anki easier to use, so if you post your specific ideas it will be helpful to the developers. (So far I think the development has maintained a balance between power users and novice users.)

If you’re in a hurry, there are many free add-ons to improve and customize Anki UI. (Addons only work on the desktop, and are basically developed by volunteers so they are not related to the official Anki.)

[1] These are add-ons that I customized or created:

[2] These add-ons are popular in Anki :

If you frequently restart Anki (e.g. Advanced Review Bottom Bar for GUI), this my add-on I have developed for restarting Anki:

[3] Many gamification add-ons improve Anki UI because they add graphics, these are popular of the gamification add-ons I develop for learning gamification:

[4] AnkiWeb

If you feel that Anki for desktop is too complicated you may want to try AnkiWeb for browser. AnkiWeb has the basic features of Anki (Free, official), it is simple and easy to use so there are no distractions. All you need to do is create cards and review them everyday, registration takes less than 2 minutes. https://ankiweb.net/
