(At least) When using the “Browse” tab the card “Front” + “Back” is not translated from what I can see.
I tested it in Swedish, English and German. Is this something missing in the translations, or is it not possible to translate these titles?

It works for me (using the built in Basic card as an example). Maybe you are using a different (potentially imported or self-created) version. In that case, they do not have translations.
Once the default note types are created (on install), their names and fields aren’t going to change when you switch display languages. But if you add a new note type when you have a different display language active, it will start from that localized version of the note type.
For example, if I switch my display language to Turkish, my existing “Basic” note type stays the same, but if I Add (“Ekle”) a new one, it will be the localized “Temel” note type.

Is that something that can be changed without creating a new note type?
You can edit the fields from the, well, “Fields…” button.
I’m not sure I follow. I am looking to edit the field titles, not the field content.
If you are in the add cards dialog and press Fields… a new window will appear. In that window, choose the field and then press rename.
