The cards I reviewed yesterday for the first time and pressed easy – 5 days, appeared in today’s due again.
One possibility is you accidentally reset the cards by creating a custom study/filtered deck or burying using the old scheduler: The Anki 2.1 scheduler - Frequently Asked Questions

It keeps happening for new cards I press easy (10 days), that they appear next day or so. I am still using old scheduler. Not the 2.1, because it’s in beta.
The beta label was removed from the 2.1 scheduler in a recent Anki update. I recommend you update using Anki 2.1.41+ or later, and then see if the problem goes away.
