You don’t necessarily need to use the User actions on AnkiDroid.

I have found using a button is more convenient than otherwise. Not to be asking too much, if I had an image showing as I review (together with text), could I add a button that toggles between zooming in and out when pressed?

Zooming in on images has been a frequent topic in the forums. Try searching for “zoom” and see if you can find something that works like you want.

Here’s one that opens images into a modal dialog, not quite the same as zoom but similar:
