I noticed that the key S enters into a deck and can be used to start reviewing, but I couldn’t find any documentation on its usage. Is there a list of the shortcuts that can be used to navigate the UI? For example, switching between decks in the main page.

Mostly they are documented by hovering over the button/link that triggers an action. The s key is documented on Studying - Anki Manual
