I’m new to Anki. Basically I want to have one template for new words, and another template for words reviewing. Is that possible?
By different template, you mean you want the question and/or answer side of the card to look different depending on whether it’s new or not?

What I’m trying to get is, a single word on the front & that word + definition on the back for new words. And for old words, definition and an input field on the front & word + definition on the back.
What you’re thinking of as the “new” template would test one thing – recognition – but your “review” template would test something different – production. Those are different skills and the review/introduction history of one doesn’t transfer to the other. This same recognition-vs-production dichotomy exists for all language and vocab learners – having both cards allows them to reinforce each other, but they are always testing a different part of your memory formation.
I’m going to suggest that it would be better to implement this as Basic-and-Reversed cards – with the Basic (single word) cards introduced first, and the Reversed cards (definition, type-answer) introduced after. [And yes, this is would be very straightforward to do.]
