Currently, accessibility settings allow you to set answer button size up to 200%, but that’s mostly width and not height. It’d be nice to be able to reduce thumb strain and (e.g.) have the buttons be 300% taller so it’s not at the bottom edge of your phone (a less natural place to hit).
In settings → controls, you can assign gestures to do basically the same thing you are asking for.
