Pretty sure there is no such add-on.

Most delete actions can be undone with Ctrl/Cmd-Z.

Just confirming on the undo one: Deleting a deck which can be devastating can be undone with a simple cmd-Z?

Yes. You can comfirm it yourself. Create a new empty deck, and try deleting it. You can undo it again by pressing Cmd-Z.

Is there an extension to block Anki from quitting when closing the main window?

Maybe something like this add-on? It makes you wait 10 seconds before you can quit, if you haven’t finished your reviews. Although not quite sure if it still works anymore.

Or are you asking for an add-on that have anki running in the background when you close main window?
