I noticed that the dark mode I get when I switch to dark mode is different than the dark mode I get when I boot the anki up in dark mode.

I much prefer the booted version, so please don’t take that away if that version is the bugged version 
It’s a known issue that should be solved with REVERT(#3622): ForceDarkMode interferes with ankis native dark theme by GithubAnon0000 · Pull Request #4483 · ankitects/anki · GitHub. That PR isn’t yet in any stable version of anki, only the dev version has it.
If you know how to, then you could try to build the latest anki and see if the problem is now fixed for you as well.
