The shown text shows on the front of my card in image occlusion mode, but then disappears when I click through to see what is behind the occlusion. how do I remove this?
Take a look at the card templates for your note type. I suspect you have added a field replacement for {{Occlusion}} somewhere on your front template.

Yes, try deleting the very bottom line. It looks like something accidentally added by clicking Add Field → Ok. The rest is pretty much the standard Image Occlusion template.

If you think you may have made other accidental changes to this note type, you might want to consider selecting Options > Restore to Default... from the top-right corner of this screen.

Just as a note for the future: any changes to a template automatically affect all the cards made from it either way. That’s why it is called a template.
