Problem: There is no shortcut for Toggle sidebar in the Browse window.
Solution: Include a shortcut on next release. I suggest Ctrl + Alt + b.
Alternatives: If above shortcut is not possible it can be Ctrl + Shift + b

I remember we had a shortcut for it years ago (can’t remember what it was), but it was removed after the sidebar was redesigned (the toggle itself was removed then added back last year): Add View menu to Qt toolbars · Issue #1530 · ankitects/anki · GitHub
Maybe this one will work for you. But above they wrote that it’s in the menu, but there’s no hotkey… so I did what I found convenient.
